The Origin of “SOUK”
The “SOUK” has been built on the concept of an open-air marketplace. Its roots and origins come from the Middle East. For centuries they traded in souks, each one dedicated to a particular type of merchandise, with many small stalls next to each other – rugs in one street, saffron, cinnamon and cardamom in the next, cooking utensils in another. Souks often extended beyond buying and selling goods to include major festivals involving various cultural and social activities.
With increasing wealth, the souks began to change. This concept was brought to a whole new level by Marco Polo in Dubai. Souk was extended from street goods into food to fashion and eventually luxury items. The spice souk offers a seductive scent with the aroma of cinnamon, saffron, chillies, nuts, dried fruits. SOUK has thus incorporated this theme by Marco Polo into our restaurant. The history and essence of the traditional market place survives at our restaurant.

SOUK boasts the culinary style and experience of our Chef’s Mr Jirawaut and Mr Thanongsak. Chef Jiravut has been in the industry for 13 illustrious years with unique experience around the world. His specialization is in French and Authentic Asian cuisine. He employs the modern techniques of cooking while blending it with traditional tastes and experiences using the finest ingredients.
Our second headchef, Mr. Tanongsak has been in the food and beverage industry since 1994. He has captured various cooking styles and food experiences from working in different places across the globe from Kenya to Sudan to Japan. His specialization is in Japanese food. He likes employing tropical ingredients and developing new and exciting dishes while maintaining a healthy experience for the diners.
